Ravioli Lasagna

I know, I know - this sounds like a nothing new recipe, but trust me, you need to try it out. This dish is a classic twist on traditional lasagna, but it just feels fancier! Dishing out lovely stacks of ravioli and bright red marinara sauce feels like a restaurant at home.

I love this meal for the fast aspect too. Brown some ground beef, throw in marinara of choice, whip up a little cheese spread, and you've got yourself some dinner! The best part? It doesn't have to sit in the oven for forever!

Ingredients

1 lb ground beef
¼ cup chopped onion
1 qt marinara sauce
15 oz ricotta cheese
⅓ cup fresh basil, chopped
½ cup parmesan cheese
16 oz pkg frozen cheese ravioli
3+ cups mozarella or colby cheese

Marinara Sauce

8-10 lb tomatoes
carrots
onion
red bell pepper
3 or 4 bulbs of garlic
olive oil
kosher salt
pepper
parmesan cheese
fresh basil
1 can tomato sauce
beef broth

Directions

Preheat oven to 350 degrees. Boil ravioli until just under done. Set aside.
In a large cast iron skillet, brown ground beef and onion together.
While cooking, mix together ricotta, parmesan and basil. Add a splash of milk for a smooth, spreadable consistency.
When beef is done, add in marinara sauce and stir well. Heat through, then remove the mixture from skillet and turn off the heat.
In the empty skillet (or a greased casserole dish) spread a scant layer of beef mixture on the bottom, then place a single layer of ravioli to cover the bottom. Next, spread half of the remaining beef mixture over the ravioli and then half of the ricotta mixture over that. Sprinkle about 1 cup of cheese. Repeat layers: first ravioli, then beef mixture, then ricotta mixture, finishing with remaining cheese to cover the lasagna generously.
Cover the skillet and bake in the oven for 15 minutes. Remove cover and bake an additional 10 minutes, or until cheese is bubbly and just starting to brown. Enjoy!

Marinara Sauce

Quarter tomatoes and place in a single layer on a couple cookie sheets. Thinly slice carrots, onion, and bell pepper and sprinkle over the top of the tomatoes. Add garlic. Drizzle olive oil over everything and salt and pepper to taste. Roast in the oven at 350 degrees for a few hours or until vegetables are very tender. Let cool.
In a blender, puree vegetable mixture (be sure to scrape the juices in), parmesan cheese, and basil. Add in tomato sauce if desired. Then blend in beef broth until you reach desired consistency. Use fresh or pour sauce into jars and freeze until ready to use.

Note:

Homemade marinara sauce is optional, you use your favorite! I love this recipe and adjust amounts to taste. I make the sauce ahead and always have a quart in the freezer!
